Minted Raspberry Cooler
Ingredients
1/2 c Fresh mint leaves
plus Mint sprigs for garnish
1 c Boiling water
1 Can frozen lemonade
(6-oz)
1 pt Fresh raspberries; crushed and sweetened with 1/2 cup sugar
Or 10 oz Pkg frozen raspberries
2 c cold water
Directions: Combine 1/2 cup mint leaves and boiling water.
Let steep 5 minutes. Add raspberries and frozen lemonade concentrate.
Stir (until thawed, if frozen raspberries are used). Strain into
pitcher half-filled with crushed ice. Add cold water and stir. Garnish

Sparkling Berry Champagne
Serves 4
Ingredients
1 750 ml bottle chilled Champagne
1 cup red raspberry juice
1/4 cup black raspberry Liqueur (such as Chambord)
Fresh or frozen whole raspberries for garnish
Fresh mint for garnish (optional)
Directions: Divide juice and liqueur evenly between 4 wine
glasses. Fill glass with Champagne, adding 2-3 raspberries and sprig
of fresh mint for garnish, if desired.

Berry Peach Sangria
Serves 4-6
A deliciously fruity and refreshing summer beverage best enjoyed
from large wine glasses, filled with ice and garnished with fruit.
Ingredients
750 ml (about 3 cups) dry red table wine, such as a Burgundy
1/2 cup orange juice, or juice of 2 large oranges
1/3 cup lemon juice, or juice of one large lemon
1/3 cup sugar
3 Tablespoons brandy (optional)
1 cup raspberries, blackberries - fresh or frozen
2 peaches, quartered and sliced
12 oz. (1 1/2 cups) club soda or sparking mineral water
Ice
Directions: In a punch bowl or 2 1/2 quart pitcher, stir
together first 5 ingredients. When sugar is dissolved, add berries and
refrigerate 2-3 hours to allow flavors to mingle. About 1 hour before
serving, add peaches. Add soda/mineral water to sangrķa just before
serving. Pour into glasses filled with ice. Garnish with berries and
fruit slices.

Citrus Berry Mimosas
Serves 4
Ingredients
6 oz. frozen orange juice concentrate
6 oz. frozen pineapple juice concentrate
2 cups raspberry juice
1 12 oz. can Lemon-lime soda, chilled
Orange slices and fresh or frozen raspberries for garnish
Directions: In pitcher or punch bowl combine all juices.
Just before serving, add soda,orange slices and raspberries.
